Why are ultra-processed foods considered more addictive than whole foods?

So, it turns out that Friday, January 31st is picture day. Thus, we have to change the day of the Healthy Eating event to February 6th. That’s ok, though, we need just a little more time to put the final touches on our projects.

In the meantime, I want to inspire you a little more about the change kids can make when they raise their voices against toxic food. Here are some videos by teens from The Bigger Picture:

Here are some questions to think about now that you watched The Longest Mile:

Tassiana describes making healthy choices as “the longest mile.” What does this mean to you?

The video mentions how unhealthy food is often cheaper and easier to get. Do you think that’s still true today in New York City? Why or why not?

This poem was made 12 years ago. If Tassiana made this video today, how might she include social media or influencers in her story about unhealthy food choices?

In the video, Tassiana talks about her family’s traditions involving food. What kinds of food traditions do you or your family have, and how do they affect your health?

As we reach the end of our Toxic Food Unit, it’s time to prepare for our celebration! The goal of our celebration is to teach younger students in our school why it’s so important for their body and mind to eat healthy.

At the celebration, elementary school students will be playing your games, using our vending machines, listening to your music and podcasts, and looking at your disgustingly scary monsters and beautifully heroic art. Some middle schoolers will also be preparing some of the delicious meals and snacks we’ve been cooking.

All middle schoolers will be invited to come to the celebration, however, to be part of the celebration, you need to have a completed game by January 30th.

…and there’s one more possible project for the celebration– A puppet show! Look at the script below to get an idea of what it can look like:

As you watch this video, think about the following questions:

Think about the ads you’ve seen on YouTube or TV—how do they make certain foods look really exciting or fun?

Why do you think companies focus on kids when they advertise junk food?

What are some ways we can choose healthy foods, even when ads make unhealthy snacks look so good? How can we convince our friends and family to do the same?

I’m going to be honest: so far in our journey learning about toxic food, there seems to be very few students who are willing to change their eating habits. I’m guessing that eating less sugar and more fiber along with more homemade food and that’s less ultra-processed doesn’t seem worth it. It takes more effort to make healthy food and doesn’t give you that instant blast of flavor.

https://youtu.be/wFfygXVg_os?si=EEMUHJqli9s1BjPn

So let’s talk a little more about what happens when you spend each day choosing to snack on ultra processed foods. One consequence of eating foods and drink that are packed with carbs and contain little fiber or protein is that you can get DIABETES. Many of you know people with diabetes, but let’s dive a little more into what it is and how you can become diabetic:

I bet some of you know someone with Diabetes, right? If so, it would be really powerful if you interviewed them for Episode 2 of your podcast. To do this, you can borrow a special recorder and take it home for the interview.

To inspire you, here’s a story about a family who struggled to change their eating habits after the father became diabetic:

We’ve already learned that food scientists at ultra-processed food (UPF) companies work around the clock to create junk food with just the right blend of fat, salt, sugar, chewiness, and crunch to keep us hooked. But it’s not just the scientists crafting this addiction – marketers and advertisers are in on it too. UPF companies spend billions to flood us with ads and pay influencers to hype up their products, all to convince us to keep buying their junk.

Not so surprisingly, the perfectly colorful, shiny, steamy, and delicious food you see on ads use special (sometimes disgusting) tricks to make it look that way:

We’ve learned that sweet junk food like candy and soda floods your blood with sugar. This leads to a burst of the reward chemical dopamine into your brain and then a rush of insulin into your blood to clean out all that extra sugar. But this rush of insulin does too good a job and clears away all of your sugar– leaving you with no energy. You Crash.

So why can’t you just eat chips like Takis? After all, when you look at a Takis’ label it only has 1g of total sugars! So no flood of sugar! No burst of Dopamine to addict you! No rush of insulin that cleans your blood of sugar too well and leads to a crash! Right?

¿Bien?

*If a serving has less than 3g of fiber it won’t slow down the sugar rushing into your blood // *Si una porción tiene menos de 3 g de fibra, no disminuirá el flujo de azúcar a la sangre.

Wrong. Unfortunately, UPF companies remove all the fiber in the wheat that makes up Takis. This leaves only white flour. Once you eat that white flour, your body changes it immediately to– you guessed it– sugar.

To see how much sugar UPFs have all you have to do is look at the Total Carbohydrates. Then do the same sugar packet calculation: 1 packet of sugar equals 3 grams.

Can you figure out how many sugar packets are in this small bag of Takis?

RECAP! We started this unit by defining what Ultra-processed food (UPF’s) is and how to spot it. Next, we spent time investigating why sugar is addictive (hint: Dopamine) and harms your mind and body. Surprisingly, we learned that cigarette companies have engineered this addiction.

After learning about UPF’s we took a deep dive into our Microbiome where we discovered that Good Bacteria creates Serotonin (the HAPPY chemical). This good bacteria feeds on the fiber in fruit, vegetables, nuts, and whole grains.

On the other hand, Bad Bacteria feeds on junk food. Once fed, the Bad Bacteria begins to control your brain– influencing it to eat even MORE junk food.

Today, we’re returning back to one of the main villains of Ultra-processed foods: Sugar. Our bodies need sugar to think, to move…to do anything! But it only needs sugar in small amounts—kind of like how a car only needs a little gas to run smoothly. If you pump too much gas into your car’s tank, it overflows, wasting fuel and making a mess.

The same thing happens in our bodies when we consume too much sugar. When we eat lots of sugar, it gives us a burst of pleasure—like a quick shot of excitement—as our brain releases dopamine. But just like a gas tank can’t hold too much at once, our body can’t handle all that sugar floating around in the blood That’s where the pancreas steps in, flooding our system with insulin to quickly clear the extra sugar before it becomes toxic. It’s like an emergency clean-up crew making sure the system doesn’t overload.

But here’s the problem- your body sends too much insulin to clean your blood of all that sugar. It takes too much of the sugar from your blood– too much fuel– and your body crashes to a halt. This leads to tiredness, brain fog, mood swings, and anxiety. To feel better, you have to wait for your body to slowly and naturally fuel back up with sugar or…flood it back up with more Starbursts and Arizonas.

So let’s see how much sugar is in that Arizona bottle. Let’s do the following activity: I’ve placed a can of Arizona on your table.

1. Look at the can and estimate how many packets of sugar there are in it

2. Write down the number of packets on your blank card. Raise your hand and tell me the number on your card.

3. Now look at the nutrition label on the can or look at the nutrition label on the board. Find where it says TOTAL SUGARS Per container.

4. In front of you are sugar packets. Each packet has 3 grams of sugar. Use this count by 3’s chart and pile sugar packets one by one so that it equals the TOTAL SUGARS.

5. On your card, write down approximately how many packets it contains. Raise your hand to tell me the answer! Does it surprise you– why or why not?

En tu tarjeta, escribe aproximadamente cuántos paquetes contiene. ¡Levanta la mano para decirme la respuesta! ¿Te sorprende… por qué o por qué no?

Now that we have these basic ideas down, it’s time to answer the question: then what should I eat?

Cooking is hard though! Sometimes we don’t have all those cool kitchen gadgets or fancy ingredients. So let’s look at some simple recipes you can make yourself.

Earlier this week, we spoke about the effects of sugar on your brain. Ultra-processed foods are loaded with sugar. When you eat it, you get a big spike of Dopamine (the reward chemical). In fact, these spikes of dopamine happen with just about every addictive drug. Constantly CRAVING that spike of Dopamine from sugar means you may be in danger of becoming addicted to it.

But Ultra-processed foods don’t just affect your mood through dopamine. Your gut is packed with brain cells! In fact, it’s called the Second Brain. And this Second Brain is constantly communicating with your First Brain (the one in your head). Watch the video below to learn more:

SEPTEMBER 30 2024

We kicked off last week by discussing how ultra-processed foods (UPFs) are designed to be addictive. Food scientists working for these UPFs use complex scientific formulas to calculate the perfect amount of salt, sugar, and fat. When you hit the perfect amount for sugar it’s called the “bliss point”, “mouthfeel” for fat, and “flavor burst” for salt. Here’s a deeper explanation:

Stop at 4:15. Start again at 6:44-8:55, Finally 9:38

Salt, fat, and sugar. One of the key ways junk food makers hook you is by packing their products with sugar.

Back when humans lived in caves, sugary foods were rare, so our brains evolved to reward us when we found them. Why? Because sugar is loaded with calories that could help a caveperson survive. But today, we’re no longer living in caves, and we don’t need all the extra calories from sugar.

The problem is that our brains are still wired to reward us every time we eat it. Junk food companies know this, and they use it to keep us coming back for more:

Stop at 1:46, start again at 3:01

So, let’s say we are addicted, and these ultra-processed food (UPF) companies are trying to get us hooked. What’s the problem with that? Why is eating too much sugar harmful? One reason is that when you consume too much sugar, your body struggles to handle it. Too much sugar in your blood can damage organs like your heart (which pumps blood), kidneys (which clean your blood), and liver (which helps break down food and remove toxins).

Option #2 On the Tech Cafe Menu is to write a song about Toxic Food. You’ve already learned that cigarette companies have owned the toxic food companies and work hard to get you addicted. Now you’ve learned that these companies add extra sugar to get you high on dopamine. Can you write and record a song exposing this?

Here’s an example:

Now it’s your turn to figure out if a food is real or fake. We’re gonna play a card game. The game can be played by 2 or 3 people. You’ll have two kinds of cards, real food and fake (ultra-processed) food. Mix them up.

Next, choose someone in your group to grab a card from the deck. When they do, the rest of the group has to call out real or fake. If they get it right, they can keep the card. If they get it wrong, the other player keeps the card.

Now, the pile of cards is passed to the next group member. This time, they pick the card from the pile and the other group members guess. Keep passing the pile until the pile is used up. The player with the most cards wins!

OK, so now you know that Ultra-processed foods are broken down to it’s molecules and blended with chemicals, fat, sugar, and salt to make them more addictive. But who cares? Why is doing all that bad for you?

The short answer is that:

  1. When you break foods down for your body, instead of your body doing it, you don’t feel full so you eat more.
  2. When you break down foods for your body it leads to a huge spike in sugar. This sugar rush leads to addiction. It also causes all sorts of physical problems including diabetes, heart disease, and obesity.
  3. Without fiber and other nutrients, you are growing bad bacteria in your gut and killing the good bacteria (more on this later).

Here’s a video to explain some of this:

And so it begins! We’re diving into our first social issue of the year: Toxic Food. Whether it’s Coke, Takis, Nestle Crunch bars, beef jerky, or french fries, I bet none of you think junk food is actually healthy, right? You probably already know it can lead to things like obesity, energy crashes, heart disease, and cancer.

But here’s where it gets deeper. Just like vaping companies target teens to get them hooked on nicotine, you are being targeted. Toxic food companies want you to crave and consume their products over and over—even when you know they’re bad for you. Still don’t believe me? Guess who owned most of the biggest junk food companies? The cigarette companies.

¿Aún no me crees?

Let’s start by defining the toxic food we’ll be talking about– it’s called ULTRA-PROCESSED FOOD. Ultra-processed foods are actually FAKE food. Factories blend together food with chemicals, sugar, salt, and oil to trick your body into loving and craving it. Here are some examples of ultra-processed foods:

It’s pretty easy to spot an ultra-processed food. All you have to do is look at the label in back. If there are ingredients that are hard to pronounce or ingredients you can’t find in a supermarket, then it’s probably ultra-processed. Here are some label examples– try to read them out loud:

Truth always comes up with the funniest and eye-opening videos against cigarettes and vaping. We’ve already watched a bunch, but here are a few new ones. In them, they talk about how Nicotine can increase anxiety by releasing a hormone called cortisol. Plus, anxiety arrives when you are withdrawing from nicotine– which happens a few hours after your last cigarette unless you smoke another.

Movies don’t just happen. They take a lot of planning. Last week, we began talking about one of the most important steps in making a movie: Storyboarding. Think of Storyboards as little comics that give you a guide on how to film each scene of your movie. They not only show you who the characters are and what they’ll say, but also HOW to film it. Here’s what I mean:

Earlier this year, we made storyboards for a short story called The Fall. Remember?

Time to dive back into Neuroscience! Something you’ve already learned is that THC affects your ability to focus, remember, and learn. But why is that? Well, it has to do with your brain’s memory center: The Hippocampus.

The Hippocampus takes in experiences from all your senses and packages them up as memories. Like a mail delivery truck, it begins a journey to deliver the packages of memories throughout your brain. It has “go” chemicals and “slow down” chemicals for the delivery truck. The “go” chemicals are like the gas pedal in the postal truck—they help the truck speed up to make quick deliveries of fresh memories. The “slow down” chemicals act like the brakes—they help the truck slow down to avoid crashes or delivering the wrong packages.

So, when you get high off of THC, the THC prevents the “go” chemicals. Instead, all your hippocampus produces is the “slow down” chemicals. Without the go chemicals, very few packages are sent out by the Hippocampus to form memories–the delivery truck never leaves the garage.

With all that in mind, let’s talk a little more about how memory works and how to make it better!

It’s time to continue our study of neuroscience. Remember: to really understand how nicotine and marijuana (THC) affect you, it’s essential to understand how your brain works.
